In the past century, whenever the word “Vietnam” was mentioned, it often conjured a single image: “the war.” People would immediately think of those iconic black-and-white photos – bombed villages, civilians fleeing the chaos, soldiers clutching their weapons, bracing for the next wave of intense fighting. “Vietnam” and “Vietnam War” were almost synonymous, leaving little room for other associations.

Yet, behind the frontlines, with or without the war, life continued. Every morning, markets opened as mothers, sisters, and aunts shopped for ingredients to prepare daily meals. Street vendors remained busy, serving beloved, affordable dishes that children and low-income families adored. Restaurants, too, stayed open, offering a space for social gatherings, where friends and families could connect over food. War or no war, Vietnam’s culinary traditions endured – a vibrant, exciting scene often overlooked amid the smoke and thunder of battle.

After 1975, waves of Vietnamese people fled, seeking freedom and a better life abroad. Though they carried the burdens of war and loss, they didn’t bring only painful memories. In their new homelands, they also shared a rich culinary heritage. Phở was arguably the first Vietnamese dish to capture Western hearts, followed by a variety of rice dishes, noodle soups, and Bánh Mì. With 4,000 years of history, a tropical climate, access to the sea, and fertile land capable of producing an abundance of fruits and vegetables, Vietnam has been blessed with a diverse and flavourful cuisine – one that has earned a prominent place in the global culinary landscape.

Welcome to Vietnamese Food Recipes, a heartfelt project by a group of Vietnamese friends living in Canada. Our mission is simple: to share the rich, authentic flavours of Vietnamese cuisine with the world.
