Prepare the Apples:In a wide bowl, mix together the sugar and ground cinnamon. Set aside.Slice the apples into 0.5-inch-thick rounds. Use a small round cookie cutter (approximately 1.50 inches in diameter) to remove the core from each apple slice.Prepare a bowl of water mixed with lime juice. Submerge the apple rings in the mixture and let them soak for about 5 minutes to prevent browning. After soaking, remove the apple rings and pat them dry with a paper towel.Coat both sides of the apple rings evenly in the sugar and cinnamon mixture. Set them aside.
Prepare the Puff Pastry:Place the puff pastry sheet on a lightly floured surface.Use a sharp knife or a pizza cutter to cut the puff pastry into 1-inch-wide strips.
Assemble:Wrap each apple ring with puff pastry strips, overlapping slightly as you wrap to cover the ring completely. Place the wrapped apple rings on a baking tray lined with parchment paper.Brush the surface of the puff pastry lightly with the melted butter, and sprinkle the cinnamon sugar on top.
Bake:Preheat your oven to 375°F (190°C).Bake the apple pastries for 20-25 minutes, or until the puff pastry is golden brown and flaky.
Serve:Remove the pastries from the oven and allow them to cool for a few minutes.Optionally, sprinkle powdered sugar or add your favourite toppings for an extra touch of flavour and sweetness.Enjoy your delicious Apple Ring Pastries!
