Prepare the IngredientsIn a mixing bowl, combine the shrimp with 2 teaspoons of mushroom powder and ½ teaspoon of ground black pepper. Mix well and let the shrimp marinate for about 20 minutes.Cut the pork belly into bite-sized pieces. In a separate mixing bowl, combine the pork with 1 teaspoon of mushroom powder, ½ teaspoon of MSG (or chicken bouillon powder), ½ teaspoon of ground black pepper, and 1 teaspoon of fish sauce. Mix well and let the pork marinate for about 20 minutes.Cut the green onions into small pieces, keeping them ready for garnish.
CookHeat a medium, oiled nonstick skillet over high heat. Add half of the chopped garlic and shallot, sautéing until fragrant. Add the marinated shrimp and stir-fry quickly until they just turn pink. Remove the shrimp from the skillet and set aside.Using the same skillet, add a bit more oil and bring it to high heat. Add the marinated pork belly, stirring occasionally until the pork is cooked through and starts to brown.Return the shrimp to the skillet, along with the remaining garlic and shallot. Stir everything together well.Add 2 tablespoons of fish sauce, 1 teaspoon of sugar, and 1 tablespoon of annatto oil (if using) for colour. Adjust the seasoning as needed. Stir everything thoroughly to ensure the flavours are well combined.Continue stir-frying until the shrimp and pork develop a slightly charred colour on the outside. Once done, turn off the heat and sprinkle the chopped green onions over the dish, stirring briefly to mix.
